Lentils with pumpkin recipe

Ingredients:

  • 230 ml Bouillon, vegetables
  • 1 TL Curry paste, green
  • 15th G ginger
  • 2 Pc Garlic cloves
  • 550 G Pumpkin, Hokkaido
  • 1 Stg leek
  • 180 G Lentils, brown
  • 2 Tbsp oil
  • 1 prize pepper
  • 170 ml cream
  • 1 prize salt
  • 2 Tbsp Lemon juice

Method:

1. The first step to prepare these lentils with pumpkin is to place the lentils underwater in a saucepan and make sure that the lentils are covered fully. Cook those lentils on medium heat for about 30-35 minutes with the cap on.

2. Meanwhile, you can cut the leek into fine rings but after washing it. Finely chop the peeled garlic clove and ginger. Dice the pumpkin into bite-sized pieces.

3. Now you can fry the pumpkin cubes in a saucepan with some oil for about 5 minutes and then you can add the leek, ginger, and garlic. Then fry it for another 5 minutes, deglaze the pumpkins with the bouillon and cook for 15-20 minutes more until the pumpkin is firm to the bite.

4. Once the lentils are done, then you can pour them into a sieve and drain them very well. Fold them under the lentils and then stir in the fresh cream. Cook it for another 5 minutes and season it with pumpkin, lemon juice, salt, pepper, and curry paste. Your dish is ready to be served, so serve it as it is still hot.
