This is the real challenge for many people that they prepare bacon but the meat is not soft or crispy so in this recipe we basically are going to do this. 1. The first thing that you have to do in order to prepare this dish is to preheat the oven to 190 degrees first.

2. Now you will have to cut the rind into a diamond-shaped figure. Rub the meat and rind with salt, pepper, and paprika.

3. Here you have to pour down 1/4 of boiling water into the roaster. Put the meat in with the rind facing down and cook it for 20 minutes.

4. Roughly dice the peeled onions, carrots, and celery. Cut the root of leek, then cut them into rings and wash them in a sieve. Rinse the soup bones with water and dry off, wash the parsnips and roughly chop them.

5. Now you will have to turn the roast in the roasting pan and make sure the rind is on top. Turn the heat up as well to 220 degrees. Peel the garlic and then press it on to the rind and distribute it in the spaces between the diamonds. Surround the meat with the bacon and pin it with the small wooden sticks. Scatter the bones, vegetables, and parsley around the roast. Now you have to roast the meat for 20 minutes at 220 degrees, then 1.5 hours more on 170 degrees, constantly pouring down the roasting liquid over it and also the bouillon.

6. Take the roast out of the roaster. Put the drip pan under the wire shelf in the oven and then put the roast on the wire rack. Again turn the heat up to 220 degrees. Now you will have to mix the 2 tablespoons of warm water with 0.5 tablespoons of salt and brush the bacon with this mixture. Divide the broccoli into florets and put it in the roaster. Place the roast in the oven for 10 minutes more and let the rind become crispy.

7. Meanwhile, you can pour the vegetables away from the broccoli and the roasting liquid from the roaster through a sieve into a saucepan. You now have to pass the vegetables through the sieve. Leave the sauce for some time, this would be its simmering time. Then sprinkle the sauce with salt, pepper, caraway seeds, and pour some beer as well. Detach the wooden sticks and also remove the bacon if you want to. So now you are ready to serve your dish, so make sure you slice the roast and serve it with the sauce and broccoli.
