- 1 Pc Garlic cloves
- 1 prize Ground caraway
- 1 Stg leek
- 0.5 TL Paprika powder
- 0.5 Federation Peterli
- 0.5 TL Pepper, freshly ground
- 2 Pc Carrots
- 0.5 TL salt
- 1.25 kg Schüfeli (pork shoulder)
- 0.25 Kn celery
- 400 G Soup bones
- 200 ml Full beer
- 2 Pc onion
Method:
1. The first thing that you have to do in order to prepare this dish is to preheat the oven to 190 degrees first.
2. Now you will have to cut the rind into a diamond-shaped figure. Rub the meat and rind with salt, pepper, and paprika.
3. Here you have to pour down 1/4 of boiling water into the roaster. Put the meat in with the rind facing down and cook it for 20 minutes.
4. Roughly dice the peeled onions, carrots, and celery. Cut the root of leek, then cut them into rings and wash them in a sieve. Rinse the soup bones with water and dry off, wash the parsnips and roughly chop them.
5. Now you will have to turn the roast in the roasting pan and make sure the rind is on top. Turn the heat up as well to 220 degrees. Peel the garlic and then press it on to the rind and distribute it in the spaces between the diamonds. Surround the meat with the bacon and pin it with the small wooden sticks. Scatter the bones, vegetables, and parsley around the roast. Now you have to roast the meat for 20 minutes at 220 degrees, then 1.5 hours more on 170 degrees, constantly pouring down the roasting liquid over it and also the bouillon.
6. Take the roast out of the roaster. Put the drip pan under the wire shelf in the oven and then put the roast on the wire rack. Again turn the heat up to 220 degrees. Now you will have to mix the 2 tablespoons of warm water with 0.5 tablespoons of salt and brush the bacon with this mixture. Divide the broccoli into florets and put it in the roaster. Place the roast in the oven for 10 minutes more and let the rind become crispy.
7. Meanwhile, you can pour the vegetables away from the broccoli and the roasting liquid from the roaster through a sieve into a saucepan. You now have to pass the vegetables through the sieve. Leave the sauce for some time, this would be its simmering time. Then sprinkle the sauce with salt, pepper, caraway seeds, and pour some beer as well. Detach the wooden sticks and also remove the bacon if you want to. So now you are ready to serve your dish, so make sure you slice the roast and serve it with the sauce and broccoli.

The Nutritional Benefits of Spickspeck – Larded Crust Roast
When it comes to healthy eating, many people assume that a dish like Spickspeck – Larded crust roast is off-limits due to its rich ingredients. However, when prepared thoughtfully, this dish can offer several nutritional benefits. The key is in the ingredients and portion control. Traditional Spickspeck includes pork belly, which is rich in protein and essential vitamins such as B12 and B6. These vitamins are vital for energy production and brain health. Additionally, the larding process, which involves inserting strips of fat into the meat, can help retain moisture and flavor, reducing the need for excessive cooking oils or butter.
Moreover, the crust of the roast, often made from a mixture of herbs, spices, and breadcrumbs, adds a layer of fiber and antioxidants. For instance, the use of rosemary and thyme not only enhances the flavor but also provides anti-inflammatory benefits. A single serving of Spickspeck – Larded crust roast can offer approximately 25 grams of protein, which is nearly half of the recommended daily intake for an average adult. This makes it a satisfying meal that can help keep you full for longer periods, potentially aiding in weight management when consumed as part of a balanced diet.
To maximize the nutritional value of your Spickspeck – Larded crust roast, consider using leaner cuts of meat and supplementing with additional vegetables. This approach can help balance the macronutrients and provide a wider range of vitamins and minerals. For example, adding carrots, parsnips, and Brussels sprouts not only complements the flavors but also boosts the dish’s fiber content and vitamin C levels.
Expert Tips for Perfecting Your Spickspeck – Larded Crust Roast
Achieving the perfect Spickspeck – Larded crust roast requires attention to detail and a few expert techniques. According to culinary experts, the first step is to select high-quality ingredients. Opt for organic or free-range pork if possible, as it tends to have a better flavor and texture. When larding the meat, ensure that the fat strips are evenly distributed to promote uniform cooking and flavor distribution.
Temperature control is another critical factor. Preheat your oven to 220°C (428°F) and sear the roast for 15 minutes to lock in the juices. Then, reduce the temperature to 160°C (320°F) and continue roasting until the internal temperature reaches 63°C (145°F) for medium doneness. This method ensures a crispy crust while keeping the inside moist and tender. Resting the meat for at least 10 minutes after cooking is also essential, as it allows the juices to redistribute, resulting in a more flavorful and succulent dish.
Here are some additional tips to elevate your Spickspeck – Larded crust roast:
- Marinate the meat: Consider marinating the pork overnight in a mixture of olive oil, garlic, and herbs to enhance its flavor profile.
- Use a meat thermometer: This ensures accurate cooking and prevents overcooking, which can lead to dry meat.
- Experiment with spices: While traditional recipes call for salt and pepper, don’t be afraid to add smoked paprika or cumin for a unique twist.
- Incorporate root vegetables: Adding potatoes, carrots, and turnips to the roasting pan can create a one-pan meal that is both convenient and nutritious.
By following these tips, you can create a Spickspeck – Larded crust roast that is not only delicious but also a showstopper at any dinner table.
Adapting Spickspeck – Larded Crust Roast for Dietary Preferences
In today’s health-conscious world, adapting recipes to fit various dietary needs is essential. The Spickspeck – Larded crust roast is versatile and can be modified to suit different dietary preferences without compromising on taste. For those following a low-carb or keto diet, this dish is already a great option due to its high protein and fat content. However, if you’re looking to reduce the carb intake further, you can omit the breadcrumbs in the crust and use almond flour or ground pork rinds instead.
For vegetarians and vegans, a plant-based version of Spickspeck can be created using seitan or tempeh as a meat substitute. The larding process can be mimicked by using coconut oil or a plant-based butter to add moisture and flavor. Additionally, a crust made from crushed nuts and seeds can provide a similar texture and taste to the traditional breadcrumbs.
For individuals with gluten sensitivities, it’s important to ensure that all ingredients, especially the breadcrumbs and any pre-made spice mixes, are certified gluten-free. Alternatively, you can use gluten-free breadcrumbs or other alternatives like quinoa flakes.
Here are some specific adaptations for different dietary needs:
- Keto: Use almond flour for the crust and add extra healthy fats like avocado oil.
- Vegetarian: Substitute meat with portobello mushrooms or a thick-cut cauliflower steak.
- Gluten-free: Opt for gluten-free breadcrumbs or use crushed nuts and seeds for the crust.
- Low-sodium: Use fresh herbs and spices instead of pre-made seasoning blends, which often contain high levels of sodium.
By making these simple adjustments, you can enjoy a delicious Spickspeck – Larded crust roast while adhering to your dietary preferences and restrictions.
